Dissolve sugar and salt with boiling water. Stir in ice cubes to cool mixture. Add pork chops cover and chill 30 minutes.
Saute onion in hot oil until tender. Add garlic and ginger cook stirring constantly, 45-60 seconds or until fragrant. Add ketchup, peach preserves and peaches. Reduce heat to low and simmer, stirring occasionally, 30 minutes or until sauce thickens. Add vinegar, season and remove from heat.
Remove pork from brine, discarding. Rinse pork well, and pat dry with paper towels. Preheat grill to 350º- 400º. Grill covered 5-6 minutes on each side or until 145º internal temperature. Basting pork occasionally with peach mixture. Remove and let rest 5 minutes before serving. Serve with reserved peach mixture
For Sauce: Combine vinegar, juice and 1 Tbsp oil until well blended. Slice pork lengthwise; cut each half crosswise into 1/4 inch pieces. Sprinkle pork with salt and pepper. Heat remaining oil over medium high heat. Add pork and cook 2-3 minutes per side. Stir in 1/2 c sauce and cook 1-2 minutes stirring constantly.
For Salad: slice strawberries, cucumber and onion. Cut carrots into julienne slices. Combine with spinach. Plate and top with pork and sauce.
Place spinach in serving bowl. In saucepan, put remaining ingredients, minus the EVOO, and bring to medium heat. Gently warm while whisking. Remove from heat before it simmers. Allow to cool for a minute, and whisk in EVOO to emulsify. Adjust seasoning. Gently dress spinach with warm vinaigrette and top with remaining bacon and shallots.
Combine red wine, olive oil and seasoning, drizzle over fruit. Toss to mix. Let stand, refrigerate, for several hours.
Drain and serve in lettuce cups. Makes 4-6 servings.
Twist: To sweeten the deal, try a Balsamic Vinegar -- Pomegranate Quince or Cranberry Pear. At the brilliance of citrus by substituting EVOO for Lime Olive Oil.

Twist: Add a smidgen of cinnamon. Top on greens or cut apples. Spice it up a bit with crushed red chilies or cayenne pepper. Play with the balsamic vinegar flavors -- use Cinnamon Pear instead of Red Apple

Fill each container with half white and half brown sugar, blend. Pour olive oil over the sugar until it soaks in and covers the sugar just over the top. Stir, and add more olive oil if necessary. Put several drops of choice essential oils.
Twist: Lime Olive Oil, Blood Orange, and Lemon all make wonderful base oil for scrubs. Add Essential oils to heighten the sensory. A high polyphenol Extra Virgin Olive Oil will add good things to the largest organ we have; skin!
Fresh ginger is the secret to the taste of this vinaigrette. Ginger is a root herb that can be bought at any food store. It can also be bought ground or dried, they won't work for this vinaigrette because the taste just isn't there. To prepare the ginger just peel it with a paring knife and chip into small pieces that will blend. Do not drain the oranges; a lot of flavor is in the liquid.
Twist: This vinaigrette is excellent on a salad of shredded cabbage, shredded carrots, raisins, some kind of nuts, green onions and grilled diced chicken all tossed with the vinaigrette. For a little extra kick, add some crushed red chilies, habaneras, cayenne pepper or jalapenos. Combine everything and blend well. Add the olive oil and blend well again.
