Plate arugula, and then arrange cheese and tomatoes in alternating pattern, top with basil leaves and oregano. Drizzle with Olive Oil and Balsamic Glaze
Any of our fun flavored balsamic vinegar can be thickened into a glaze. Take 1 c of choice balsamic vinegar and place in a small pot, apply heat low and slow on the stove top, until product reduces by 1/2.

In a medium sauce pan, combine the water, vinegar, and salt. Bring to a boil over medium heat. Place the garlic and sliced peppers in a large mouth canning jar or two smaller jars. Pour in the hot boiled pickling liquid in to each jar, completely covering the peppers but leaving a head space of 1/2" from the top of the jar. Allow to cool to room temperature and then refrigerate for 10 days before eating. Keep refrigerated and use within 1 month. These peppers can be enjoyed as is or drained of pickling liquid and drizzled with a fresh, herbaceous extra virgin olive oil such as Frantoio, Coratina or FS17.
For this exceedingly simple yet extremely delicious application, try two “lifter” cuts off the chuck for this Chicago style sandwich. Don’t worry if you can’t find “lifters” though, just use a chuck roast and you’re all good.
Preheat the oven to 425. Cut 24 slits in to all sides of the roast and insert garlic slivers in to each slit. Liberally slather the roast with Tuscan Herb Olive Oil and coat with a blend of dried oregano, red pepper flakes, and salt. Place the roast onto a rack set in a roasting pan. Roast at 425 F. in the center of the oven for 20 minutes, and then add the beef stock to the roasting pan. Cover the roast with foil and reduce the heat to 300 F.. Slow roast for an additional 3 hours covered with foil.
This roast is delicious on its own. However, you can also slice it paper thin for Italian Beef Sandwiches. Serve the warm sliced meat dunked in to the seasoned roasting broth, on sturdy rolls with pickled vegetables and or peppers and a drizzle of Tuscan Herb Olive Oil to finish.

Cook pasta per instructions. Reserve 1 1/2 c of the cooking water; set aside and keep warm. Combine marinara sauce half of the basil, garlic and pepper flakes. Bring to a simmer over medium heat; cook 10-12 minutes, stirring occasionally.
Combine bread crumbs with olive oil; mix well. Preheat broiler on HIGH. Add cooked pasta and reserved water to sauce; toss to coat. Place in a broiler proof pan/skillet. Sprinkle evenly with cheese and top with bread crumbs. Place skillet as close as possible to heating element. Broil 5-7 minutes or until cheese is melted and bread crumbs are golden brown. Sprinkle with remaining basil; serve immediately.
To make this vinaigrette, measure and combine all the ingredients together including the oils and blend very well.
Twist: Great for sub sandwiches. Pairs well salad of romaine, fresh tomatoes and shredded Parmesan cheese and some raw vegetables. Excellent marinade for chicken or pork.
Try with a white balsamic vinegar for a slightly sweeter version. Added flavor with an infused oil would complement this dressing

Measure all the ingredients. Blend all ingredients. Taste; add more honey if needed. The amount of honey can also be lessened from the start if you like a really strong vinegar taste. Sugar can be substituted for honey-start with 1 Tbl. Add the olive oil and blend well again.
Twist: Any type of lettuce and vegetable combinations pair wonderfully. Goes well with chicken or fish.
Combine & chill above ingredients in large bowl.
Toss with dressing of reserved Atomic Frog Ball liquid blended with olive oil (equal parts) to taste.
May be topped with grated Parmesan.
Add chilled, sliced chicken to serve as entrée.
